Greek frappé coffee is hugely popular in Greece, especially during the hot summer months. The particularity of this drink is that it requires the use of instant coffee in order to obtain its characteristic foamy head. While Nestle’s Nescafe instant coffee has become synonymous with frappé in Greece, most instant coffee will do for preparing this drink. You may notice under the preparation steps that we used a frothing machine. A handheld frother or cocktail shaker will also do the trick, which I will discuss in more detail below. Greek frappé being quite concentrated, is often served with a glass of water. As you consume the coffee, water is added to dilute the remaining coffee and extend the life of the drink.

Ingredients

  • 1 teaspoon instant coffee
  • 1 teaspoon sugar
  • 3 – 4 ice cubes
  • Water

Preparation

  • Pour instant coffee and sugar in a tall glass or shaker
  • Add 3 teaspoons water
  • If using a frother, froth the liquid in the cup. If using a shaker, add the ice to the shaker and shake vigorously for about 5 minutes. As air bubbles are incorporated into the liquid, it will increase in volume and stiffen
  • Keep frothing/shaking until all of the liquid in the cup/shaker has turned to foam
  • Pour the coffee foam into a tall glass. If using a frother, you will need to add the ice cubes once the foam has been poured into the cup
  • Fill the remainder of the glass with water and stir
