This dish, which I think of as Greek Bruschetta, is called "dakos". The traditional recipe is prepared using barley rusks, a hard cracker-like bread made with barley flour. For our family recipe, we use our homemade bread, which is hearty and can hold up to the moisture of the grated tomato. Summer is a particularly wonderful time to prepare this dish given that it is light, refreshing, and doesn't require you to turn on the stove or oven in the hot weather.
